Cosmic Brownie Mousse

No 90's kids lunch was complete without some sort of Little Debbie cake. You know I'm right. One of my favorites was the Cosmic Brownie, it was most likely the combination of rainbow sprinkles and chocolate that drew me to it. And still draws me to it.

Let's face it though, we all know that those scrumptious snack cakes are indulgent and don't belong in our lunches. But that shouldn't stop us from enjoying them every now and then as a dessert!

I've made this chocolate mousse as an ode to Cosmic Brownies, a little bit more refined but with all the fun. You could say they're a "refunned" take on the classic.

I'd totally serve these at any party calling for a delicious chocolate treat, or even as a quick way to serve up something sweet on a hard day. Read below for the recipe!

Cosmic Brownie Mousse

  • 1/4 cup of butter
  • 1/4 cup of water
  • 1 bag of mini marshmallows
  • 9 oz. of chocolate chips
  • Chocolate rainbow sprinkles
  • 16 ounces of heavy cream
  • Instructions:
    1. Add water, chocolate, marshmallows, and butter into a pan over low heat.
    2. Allow to melt, stirring frequently.
    3. Set the mixture aside and allow to cool.
    4. While cooling, beat the heavy cream until fluffy and soft peaks form.
    5. Fold the cream into the chocolate mixture until combined.
    6. Place into dessert cups and top with sprinkles.
    7. Allow to set for two and a half hours.
